Trying to avoid getting another takeaway curry and looking for some vegan dinner recipes? You’ve come to the right place!
Growing up, my absolute favourite Indian meal was malai kofta. Sadly, though, I became vegan and it contains cream! I also used to make it at home for my family but, unfortunately, it takes forever and cleanup was a bit of a nightmare as well.
This is my simplified vegan microwave version for nights when I want those flavours without the longer cooking and cleanup of the version I used to make at home.
