Quick Vegan Breakfast Ideas: 10 Minute Banana Bread

Craving something sweet or looking for some more exciting vegan breakfast ideas? This easy vegan banana bread mugcake can be made in the microwave. This recipe is great for university students living in dorms or halls (who only have a microwave and are looking for a hearty brekkie or a late-night study snack). It's a perfect quick, tasty, budget-friendly meal that only uses one bowl (we all love saving on washing dishes!).

Like the rest of the world, when I get cravings for sweets, I get them bad. But, since I don't eat sweet foods *that* often, I sometimes don't have anything on-hand to satisfy them. This mugcake uses ingredients you're likely to have in your pantry already and only takes about 10 minutes! Read on for how to make this easy vegan breakfast!

Banana Bread Mugcake

Ingredients

1 large banana
1/4 cup flour
1 tsp baking powder
3 tbsp vegan chocolate chips
2 tbsp vegetable oil 3 tbsp almond milk
1/3 cup suger
1/8 tsp salt
1/4 tsp vanilla

Instructions

1. Combine all ingredients into a microwave-safe bowl, mash, and mix well.  
2. Microwave on high for 6 minutes.  
3. Leave to set for an additional 5 minutes before serving.
