Vegan Mac N Cheese Pre-prep 10 minutes Cook Time 5 minutes Servings 2 servings Ingredients 1/2 cup elbow macaroni 2 tbsp vegan butter1 tbsp milk1 tbsp butternut squash baby food 2 tbsp nutritional yeast 1/2 tsp garlic powder1/4 tsp onion powder1/4 tsp ground mustard1/4 tsp paprikaSalt and pepper (to taste)1 sprig of fresh parsley Instructions 1. Place 1/2 cup elbow macaroni in a microwave safe bowl. Add water until pasta is fully covered.2. Microwave on high for 5 minutes. Stir. Microwave for another 5 minutes.3. Microwave 2 tbsp of butter on high until melted (approximately 20 secs). 4. Mix in 1 tbsp of almond milk; 1 tbsp of butternut squash baby food; 2 tbsp nutritional yeast; 1/4 tsp onion powder; 1/4 tsp ground mustard; 1/4 tsp paprika; 1/2 tsp garlic powder; salt and pepper (to taste). 5. Add pasta and mix. 6. Serve with fresh parsley.
