I absolutely loved quiche when I was a vegetarian, so, when I became vegan, I was eager to find a replacement. The chickpea flour is packed with protein and the veg means you’ll be well on your way to your 5-a-day!

Eggless Quiche

1 small quiche
Ingredients
11 tbsp aquafaba
1 tbsp nutritional yeast
1/2 cup spinach
1 tbsp diced sun-dried tomatoes
5-6 black olives
1 tbsp onion
1/2 tsp onion powder
1/2 tsp parsley
1/2 tsp paprika
1 cup chickpea flour
1 tbsp olive oil
2 tbsp vegetable broth
Salt (to taste)
Pepper (to taste)
Instructions
1. Combine all ingredients in a microwave-safe bowl and cover with a wet towel.
2. Microwave on high for 3 minutes.
