Growing up, my absolute favourite Indian meal was malai kofta. Sadly, though, I became vegan and it contains cream! I also used to make it at home for my family but, unfortunately, it takes forever and cleanup was a bit of a nightmare as well.
Basically, this curry is super easy, healthy, and perfect for a night where you’re feeling a bit lazy about cooking but don’t want to spend more money eating out!
Malai Kofta

Ingredients
1 tsp ground ginger
2 tsp garam masala
1 tsp cumin
1 tsp turmeric
2 cloves garlic
1/4 tsp cayenne pepper
1 tsp paprika
1 bay leaf
1 tsp cardamom
1/4 tsp nutmeg
2 cloves 3 tbsp cashews
1 tsp ground cilantro
1 tbsp golden raisins
1/4 can coconut milk
1/2 can diced tomatoes
2 small potatoes
1/4 block of tofu
1/3 cup chickpea flour
2 tbsp olive oil
1/4 cup diced onions
Salt (to taste)
Instructions
Kofta
- Peel potatoes, pierce with a fork, and place in microwave-safe bowl.
- Microwave on high for 5 minutes.
- Add in 1/4 block of tofu, 1/3 cup chickpea flour, 2 tbsp olive oil, 1/4 cup of diced onion, 1 tsp garam masala, and salt and red pepper (to taste).
- Mash all ingredients and form into 5-6 small balls. Microwave on high for 3 minutes.
Curry
- Combine the following ingredients in a separate bowl:
- 1 tsp ground ginger
- 1 tsp garam masala
- 1 tsp cumin
- 1 tsp turmeric
- 2 cloves of diced garlic
- 1/4 tsp cayenne pepper
- 1 tsp paprika
- 1 bay leaf
- 1 tsp cardamom
- 1/4 tsp nutmeg
- 2 cloves
- 3 tbsp cashews
- 1 tsp ground cilantro
- 1 tbsp golden raisins
- 1/4 can coconut milk
- 1/2 can diced tomatoes.
- Microwave on high for 3 minutes.
- Add kofta into sauce before serving.
