They’re filled with protein from the chickpea flour and lots of veg to keep you healthy during busy periods! With a total prep and cooking time of less than 10 minutes, you’ll be able to get back to work in no time!
Microwave Flatbread Pizza

2 mini pizzas
Ingredients
2 cups chickpea flour
1 tsp baking soda
3 tbsp olive oil
1 can aquafaba
4 tbsp vegetable broth
2 tbsp diced yellow onion
2 button mushrooms 1 handful of spinach
2 small tomatoes
4 leaves of fresh basil
1/2 tsp garlic powder
1/4 tsp oregano
salt and crushed red pepper (to taste)
Instructions
Base
1. Mix 2 cups of chickpea flour; 4 tbsp of vegetable broth; 1 tsp salt; 1 tsp baking soda; 1 tbsp olive oil; and the liquid from one can of chickpeas in a microwave-safe bowl.
2. Mix well and knead until smooth.
Microwave on high for 5 minutes.
Topping
1. Mix 2 tbsp diced yellow onion; 2 sliced button mushrooms; 2 tbsp olive oil; 1 handful of spinach; 2 small tomatoes, diced; 1/2 tsp garlic powder; 1/4 tsp oregano; and salt and crushed red pepper (to taste) in a microwave-safe bowl.
2. Microwave on high for 2 minutes.
